I suppose we were feeling funky and carefree at the market on Sunday. Apparently, we just assumed that the early white asparagus would be as tasty and delicious as last year's green Belgian spears. Nope. They were bitter and yucky, remaining tough through a good bake time.
BUT - luckily there were Kidney Bean Beanie Babies & Twice Roasted Potatoes and Carrots to carry the meal.
I can't recommend enough doing a double roasting of veg. Twice now I have experimented with this, and I just love the texture my veg gets when I throw it in the oven for a quick 25 minute rebake after a 1 hour roast on Sunday afternoon. A little bit of olive oil, herbs and pepper was all these little veggies were looking for. They were perfectly perfect.

Yum! Those potatoes look lovely! I don't recall having tried white asparagus before, but I don't think I will anytime soon now!

Did you peel the asparagus? White asparagus has a tough outer layer that needs to be peeled away before cooking.
those twice roasted veggie look (and sounds divine)! and your kidney bean beanie babies are awesome! hooray! and you're not the only one who doens't like white asparagus - ick! i don't care for it either! we can totally create a "white asparagus dislikers" group! ahahhahaaa! :)
white asparagus just doesn't seem natural...kind of like white chocolate. i've never really liked either. that plate looks really good though.
I've never had the white asparagus. I see in the stores, but it seems like it'd have less nutritional value since it's not green...I'm sure that's not true but that's how my mind thinks.
I'll have to try the double roasting trick!
I love white asparagus! It's not bitter at all normally, so I'm really surprised. It's actually got a much more mild taste than green. It is rather early, however, for it to be in season up there (it's hardly in season here, and were a bit more south). That being said, maybe it was just a bad batch! And you need to peel the outer bit of it - which is different from green.
I hope you'll give it another try - it's super yum!

I only tried white asparagus once and I didn't like it. It was super bitter. I love green though.
Funny that you should be writing about white asparagus. Just the other day our German friend was just saying how white asparagus is the best. He never had green until he came to live in the U.S. Maybe it's just a preference with what we've grown up eating. I'll have to try it!
