What we came up with was a Pumpkin and Walnut Pasta Sauce for our whole wheat penne, which, to be fair, was the brain child of both of us, but the elbow greese of Mr. VeganCowGirl. I on the other hand take full responsibility for the Pumpkin Hummus I made on a whim today for lunch. It was yummy-nummy and oh my gosh so easy!
I just added some roasted pumpkin slices to my already made hummus and I had an instant pumpkin hummus that worked great on top of a multi-grain bagel. And for the record - it is remarkably difficult to get a good shot of pumpkin pasta!

ReplyDeleteI can definitely attest to the fact that pumpkin pasta doesn't photograph well. I always have to tell people, "Yeah, it looks like a pile of sick in the picture, but truuuuuuust me, it's delicious.

so much pumpkin yumminess - bring on the pumpkin awesomenesses! i don't think i'd ever tire of pumpkin eatz! i need to try pumpkin 'n pasta, and pumkiny hummus, too!

ReplyDeleteYour pumpkin dishes sound yummy! I love anything with pumpkin in it. I never tried making a pumpkin pasta before, but it sounds like a great idea. I bet the pumpkin made the sauce nice and creamy.
