Look at the Elephant in the Room!



First off...meet my new lunch box!!! Isn't he fantastic???!!!

Had a busy Sunday!

While I was planning up a storm at my local cafe, K was cool enough to hit our organic/local market stands all on his own. Not only did he manage to snag everything that was on our market list, but he got me a little treat - a whole bunch of wild blueberries! I could hardly let them stain my fridge, so I got to work as soon as I could strap myself into my apron and whipped up a batch of Wild Blueberry & Whole Wheat Muffins. A couple of my team members might become vegan by the end of tomorrow's meeting when I unveil these tasty (and very colourful) lovelies. Are you loving the elephant tray I picked up on Saturday morning? I am!



I also managed to boil down about 6 cups of black beans with the hope of them keeping me well supplied in quick and tasty protein sources for the week to follow.



I was craving some root veggies last night and I had a pumpkin burger and a hazelnut burger in the fridge that needed eating so I threw together some organic carrots, an organic sweet potato and garlic cloves before closing them up in the 400 degree oven for about 2 hours. To this I added some farm fresh/local corn cobs (the rest I enjoyed with some black beans for lunch today). I have to say, even with my childhood exposure to the succulence of Ontario peaches and cream corn, - this was amazingly tasty corn! Yummmy!


I also put together a dish for tomorrow night's dinner - eggplant, sesame paste and chickpeas. Ready for a tomorrow night reheat.

That is the cutest lunchbox! My sister collects elephants and adores anything related to them--where ever did you find it?! (Oh, and the food doesn't look too shabby, either!) ;)

I have a cooking question...
Have you ever used "compote potagere" or "groentencompote"? It came free with 2 jars of applesauce and I am stumped on how to use it. Could I substitute it for oil in a chocolate cake recipe? I usually replace the oil with applesauce anyway and this might even be a better substitute. Maybe you have a better idea...
PS Your ideas for pumpkin are very creative!

Wow, pumpkin burgers and hazelnut burgers? Those certainly sound heaven-sent! Yum.

Julie - you could definitely sub the applesauce for the oil. I have found that in Brussels most of the apple sauce has sugar added - you really have to hunt for the sugar free stuff. But it is out there!

BTW, I love how foodies plan and prep meals the night before. I do it too and all my non-foodie friends think it's so weird that I don't just impulsively grab something every night or toss a frozen dinner in the microwave. I think they're weird.

I have to confess: I was in Brussel last weekend. And I really wanted to go to your shop, but helas, I didn't had any time for it. But now I see your beautiful lunchbox and tray, I really want to go again, but I have no idea when I will find the time again for a new visit to Brussel. (there's no time for blogging too, at this moment). In the meanwhile you can send me some of the names of food, and I can translate them for you in Dutch. Or help you with the brands, and things like that. OK?

psst: I used silken tofu for the carob bars, not the mori-nu kind, but the one in water. don't know if you find mori-nu there anyway, but I don't remember seeing it in switzerland.

Yum! I was wondering, are you Belgian? And if not, how did you end up in Belgium? I do not know much about the country except that they speak some French there. (I am taking French at school.)
